In this immersive class, you’ll learn to make Cayman’s beloved cassava heavy cake, officially gazetted as the National Dessert of the Cayman Islands in 2024, guided by Elizabeth Larsen, owner and head baker of Jazzy Cakes. Larsen is a 2025 Caribbean Baking Awards nominee for Best Traditional Caribbean Bakes and is celebrated locally for her award‑winning Caymanian desserts. Every treat she creates is handcrafted from scratch, and her passion for heritage baking shines through every step of the experience.

While your cake bakes, enjoy a guided tour of the Mission House with the National Trust team, exploring the stories of the families who lived there, the 19th‑century Caymanian yard, and the freshwater pond that once made this site a community gathering place. After the tour, you’ll glaze your cake, sample traditional variations, and leave with your own freshly baked heavy cake, a delicious cultural keepsake.
